Curry Tofu Salad

Curry Tofu with Cooked Cherry Tomatoes & Mushrooms on a Salad

You’ll need two frying pans.

Frying Pan #1
1 teaspoon Coconut Oil
1/2 package of 350ml Firm Tofu (cut into rectangles as in picture above)

Cook until the Tofu is slightly browned and then add:

2 Tablespoons Curry
1/2 cup Almond Milk

Frying Pan #2
1 teaspoon Coconut Oil
Couple handfuls of Chopped Mushrooms
Couple handfuls of Cherry Tomatoes (cut in 1/2)

Cook until browned

In individual salad bowls, add:

Greens (Your favourite salad Greens)
Sliced Pieces of Jicama
1/4 Cup of Edamame
Handful of Chopped Dry Roasted Almonds

Once frying pan #1 & #2’s contents are cooked, add the contents to your salad bowls and enjoy!

I prefer a Balsamic dressing, but the choice is yours!
