Ginger Beef with Quinoa & Scrabbled Egg

Cook Tri-Color Quinoa  with Scrabbled Eggs

3/4 cups Tri-color Quinoa
1 1/2 cups of water

Bring to a boil and then let simmer for approx. 15 mins until the all the water is absorbed.

In a small skillet, scrabble 2 large eggs

1 teaspoon coconut oil
2 large Eggs

Once the quinoa is ready, mix in the scrubbed eggs and add Soya Sauce for taste (2-3 teaspoons)


Ginger Beef: 

1 tablespoon coconut oil
1/2 chopped medium onion
1 cup diced bell pepper, red or green
1 tablespoon finely minced, peeled ginger root
2 cups Mushrooms (chopped)
1lb of Ground Beef (substitute – 2 chicken breasts chopped up) 
1/4 cup chopped green onions

1. Add coconut oil to a large nonstick skillet. Over medium heat add ground beef and brown.  

2. Add onions, bell pepper, and ginger and cook for about 5-6 minutes, until onions are translucent.

3. Remove from the heat and Enjoy! 


What to do the with the leftovers? 

Your next meal…. In a skillet – heat up 1 teaspoon coconut oil on medium high and then add the leftovers to the skillet. Cook for 5-6 mins until browned and enjoy!  Add soya source for taste!
