“What other kind of stuff?” .. Have a look!
In a Big Ol’ Pot, combine the following ingredients, cover and let simmer for a couple hours
2 Cans – 796ml Diced Tomatoes
1 Can – 540 ml Black Beans (drain and rinse before adding)
1 Can – 540ml Kidney Beans (drain and rinse before adding)
1 Can – 540ml Chickpeas (drain and rinse before adding)
1 Can – 341ml Corn Kernels (drain before adding)
4 Green Onion stalks (chopped)
2 Tablespoons – Chili Powder
1 Tablespoon – Oregano
1 Tablespoon – Cumin
1 Teaspoon – Cayenne Powder
In a frying pan, add the following ingredients:
1 Teaspoon Coconut Oil
Ground Chicken (as much as you think you’ll want)
4 Garlic Cloves (minced, smashed, diced, chopped, whatever to release your frustrations)
1 Medium Onion
Cook until the chicken is throughly cooked, then toss the mixture out the window….or… into the above mention Big Ol’ Pot with the rest of stuff and let it continue to simmer for the prescribed time.
